High Protein Recipes - Air Fried Paneer Bhurji Cutlets

This recipe is my attempt to create a dish that feels like fast food but is actually relatively healthy and rich in protein. Hope you enjoy it.

Air Fried Paneer Bhurji Cutlets - Serves 2 People

Steps

  1. Firstly, temper some jeera seeds in butter butter or a healthy oil of your choice. The trick here is to use as little grease as possible.
  2. fry 1/2 an onion in the same pan. Do this for a good 4-5 minutes
  3. Add salt, red chilli powder, kitchen king masala as per your taste
  4. Add 200 gm paneer and nicely mash it in. Cook for a few minutes on a medium flame
No nonsense Paneer Bhurji
  1. Put 2 slices of bread in a processor - I used brown bread here. Turn them into crumbs (not too fine)
This will e used to give the Paneer Bhurji Cutlets a nice crispy exterior
  1. Optional Step: Had some cheddar cheese powder in the fridge. Added a spoon of it to the bread crumbs.
Looks like sand. but it'll do the trick
  1. Once the Bhurji has cooled down, form patties and put them in the bread crumbs mixture to get a nice coating. Youll have to get messy here and use your hands to coat the cutlet well.
Forming the crispy layer
  1. Place the Paneer Bhurji cutlets in a pre heated Air Fryer and air fry them for 10-12 minutes at 200 C.
Fry till golden brown
  1. Now do note that since the Paneer has now been twice cooked (once in bhurji form and the second time in the air fryer), its going to be a bit soft while still having a nice crispy outer layer. So be careful while removing the cutlets from the air fryer.
Very badly presented Paneer Bhurji Cutlet Sandwich
  1. Plate up by making a sandwich with the Paneer Bhurji cutlet, some onion slices and 2 large slices of bread /buns. You can slightly mash in the cutlet to get a crispy paste patty as well. But use sandwich bread instead of those smaller slices. I had the small bread slices so the presentation was quite bad. But hey, it tasted good. So I'm kind of happy with the final result.
